Here is a Recipe I am submitting for the Great Avocado Adventure.
I call this Twisted Shrimp Alfredo. It is not a traditional Alfredo recipe, but one of my culinary adventures into trying to create something with what I had in the fridge.
Ingredients:
1 1/2 Avocados from Mexico- 1 should be chopped and the 1/2 should be sliced.
4 tablespoons flour
1 tablespoon seasoned salt
1 pound 26/30 shrimp raw peeled and deveined
3 tablespoons garlic butter
6 cloves garlic crushed
3/4 cup Riesling wine
3/4 cup sour cream
3 tablespoons blue cheese crumbled
3 tablespoons basil pesto
1 box pasta either angel hair or linguine
2 leaves of Fresh Basil
(This recipe goes quick so please.. make sure you have everything ready to go before you start it!!)
Start water for Pasta, do not add salt to water.
Pre-heat large saute pan over medium high heat.
Mix flour and seasoned salt together. Toss shrimp until well coated.
In the pre-heated saute pan add garlic butter and then garlic. Add Shrimp. Cook until they start to turn light pink. Reduce heat to low. Stir in the chopped Avocado, reserving the slices for garnish. Stir in wine, sour cream, blue cheese, and basil pesto. Cook until it begins to thicken. The water should be boiling by now so add pasta to the water. Cook till desired tenderness. Drain Pasta. Place pasta in nice serving bowl, and combine with sauce. Garnish with Sliced Avocado and 2 leaves of Basil.
